Ricotta al Forno




Ricotta al Forno means ricotta baked in an oven. Sicilians love this stuff. We use it grated over pasta and soups and on an antipasto plate. It can be vacuum sealed and many Italo Americans take it back to the USA. I think you could make something of the same with American ricotta. Just drain it well and bake in an oven. This was lunch today. A nice dish of pasta with fresh tomato sauce topped with grated ricotta al forno. Mangia!
